Renting a Kayak during your free times would be a great option for stalking redfish. I live in the upper laguna area, but I'll bet there are guides there that offer kayak fishing. The fish below was taken on a 8' 6" 7/8 wt built by Chris Carlin specifically for kayak fishing.

I just got back from S Padre, I have to admit I never thought I would have as much fun wading the salt as I did. The specks really put up quite the fight. I had a couple large ones on, the first one ended up breaking my line but for the short time it was on it was a ton of fun!

Don, go to Island Outfitters on Swordfish to get your flies. They hold odd hours 5-7 am and 11-2,...

I would take both floating and intermediate. If you're wading mid-thigh deep and fishing into potholes (island at your back) you want the intermediate.
This is pretty much blind fishing except that you can see the sand potholes as breaks in the grass.
Seatrout feed in the mid water column, and redfish near the bottom. - also flounder.
As I've mentioned, draining passes and along the drops on channels are good places on a falling tide - you will need an intermediate for...

Thanks for all the replies. What type of line will I need, floating, intermediate? I'll probably be able to slip away for the better part of 1 day, but for most others I'll probably be able to get a couple hours here and there. Is fishing from the beach worthwhile? What is it about feeding birds that I need to watch out for?

if you stay on the bay side, there can be some great fishing off the docks at night under the lights.

Best of luck. Laguna Madre is one of my favorite places. I've always fished the top half though. I'll hide my head and tell you I prefer plastic on salt.

I highly recommend Capt Eric Glass for a South Padre Island guide.
This means something.

You need an 8-wt. with some wind-casting backbone.
The inshore fish can be handled on somewhat lighter tackle, but you need to be able to sight fish in a stiff wind.
