        <![CDATA[ I keep hearing great things about the taste of American Shad but never had the pleasure of eating it.  I live in Maryland and there is a prohibition on eating shad caught out of local waters feeding into the Chesepeake. Still, I hope to find some on the menu somewhere one of these days. 

My &quot;Best Tasting&quot; Fish in no particular order are:

Striped Bass (Rock Fish) 
Chilean Sea Bass (Though this is becoming less and less available) 
Monkfish 
Salmon

			<description><![CDATA[ I don&#39;t think fish ever tastes better than it does cooked over a fire in a camp after spending the day roaming the tundra or woods hunting for moose and/or
caribou.

There were some pretty tasty grayling enjoyed back on the Tyone River.  The second night the grayling often shared the menu with fresh caribou backstrap.

On a moose hunting trip on King Mountain the hunger was filled at night with fresh fried dolly varden from the stream served with fried potatoes.

Fresh Lake Whitefish from the Great Lakes area;
<br>
Native Brook, Rainbow, Cutthrout, or wild Brown Trout not over 9 inches in length;

Crappie.

Unless you happen to live in the area where fresh Lake Whitefish is available, your lack of appreciation for this epicurean delight can be forgiven.  A fillet,

But Maine white perch beat them.
<br>

Sleeper species- chain pickerel. As long as you skin them, instead of just scaling them. Don&#39;t bother with fillets. Cut the flesh off the bones
(considerable) into strips, and cook them like fritters.

Lake trout fillets fried up in bear fat along with potatoes and onions on the bank of a Labrador river is really excellent, as well.
<br>
Big disappointment: walleye; after hearing so much about it over the years, I ordered it in a restaurant in Fon du Lac. Maybe it wasn&#39;t fresh, but it
certainly wasn&#39;t very good. ]]></description>

sashimi at Tokyo&#39;s Tsukiji fish market before sunrise can be memorable, especially when accompanied by a cold sake in winter. Fresh anchovies deep fried
and washed down with Turkish &quot;raki&quot; on the shores of Bosphorus while watching the sun set over the &quot;wine dark sea&quot; can leave an indelible

Blowfish tails are really good too when caught in colder water (winter/early spring). Taste and texture of lobster; broiled and dipped in butter, with a few

			<description><![CDATA[ Nothing like a smelt fry guys. Fried with sweet potato wedges. Only there hasnt been a good smelt run here in the great lakes for years. You could fry them in
the deep fryer heads and all and heat like 450 of them with a cold beer, some fried wedges with chive sour cream and butter. I pray every season that the smelt
run again, but they it seems are gone forever. ]]></description>
