This isnt a sauce but a salsa recipe that I use a lot - mix all ingredients together - let sit for at least 2 hours -
grill-saute-broil- or whatever the salmon and just add to top. Sometimes i might add a little rum or gran marnier and might substitute mango for the pineapple
2 cups coarsely chopped fresh pineapple 1/2 cup chopped red sweet pepper 1/4 cup finely chopped red onion 3 tablespoons lime juice 2 tablespoon snipped fresh cilantro 1 tablespoon honey 1 small fresh jalapeno pepper, seeded and finely chopped 1 can black beans Baxter |

My wife and I often grill salmon, and I make a fresh guacamole to serve on or next to the salmon when it's on the plate. This is definitely not a sauce to
grill with, but a really good accompaniment.
In the bowl of a food processor, coarsely chop one small (2" diameter) onion, two Roma tomatoes, the tops of a bunch of Cilantro, 1 tbs coarse salt, the juice of a lime, and 3 Jalapeno peppers, seeded. Take 3 ripe Avocados, remove the seeds, and scoop out the meat with a spoon into a large mixing bowl. Add the contents of the food processor bowl and mash with a potato masher until well mixed. Refrigerate for a couple of hours before serving. By the way, this makes a great dip, too. Enjoy! |

Not a sauce as such although there is a sauce in it. Absolutely great, I eat it about twice a week ( since cancer I eat fish a lot more often as I am told to
lay off the beef ) either with leftover salmon or just cooked. Rolls split I prefer sourdough, cook salmon and flake with fork into bowl, add 1 clove crushed
garlic, 1/2 cup tartar sauce (mayonaisse & sweet relish) , 2 hard boiled eggs diced, mix and spread on roll, add slice tomato and your preference of cheese
slice. Put under broiler to melt cheese and enjoy. Larry
