I keep hearing great things about the taste of American Shad but never had the pleasure of eating it. I live in Maryland and there is a prohibition on eating shad caught out of local waters feeding into the Chesepeake. Still, I hope to find some on the menu somewhere one of these days.

Living in North Carolina, I love fresh caught and fileted crappies. Dipped in your personal favorite batter, and then quickly deep fried! Served with the usual Southern sides.

Flounder, orange roughy(sp). Also,not particularly healthy for you but my Grandad use to fry channel catfish filets,home fries and scrambled eggs in bacon grease.Man what a breakfast that was.He fried ALOT of things in bacon grease and he lived to be 86.Makes ya wonder.

Bluegill is the best tasting fish in fresh water. Red Snapper for the salt.

I think the fish we here in Europe call pike-perch is more or less the same fish as the American walleye. Anyway, I put the pike-perch on top of the list. As number second, I think halibut. Atlantic salmon caught on the fly as number 3.

Cod Cheeks from anywhere! I have been eating them for over 20 years.... Halibut cheeks are very good also.

Crappie ANY Wild Trout Bluegills Red Snapper Bass Flounder Catfish The only way I'll eat those Oklahoma stockers any more is straight from the stream to the frying pan. Even then, they still do taste a little like higher grade cat food. |

Sacramento Perch in Bisquick beer batter is the best I can remember. It's the only western native of the sunfish family and there are plenty of them in Lake Crowley in CA.

As to shad, the only good shad I've ever had was cooked by Chief Warren Cook of the Pamunkey tribe in King William County, Va. I don't know what seasonings he put on it, but it was smoked until the bones dissolved. |
