Fresh Lake Whitefish from the Great Lakes area; Native Brook, Rainbow, Cutthrout, or wild Brown Trout not over 9 inches in length; Crappie. Unless you happen to live in the area where fresh Lake Whitefish is available, your lack of appreciation for this epicurean delight can be forgiven. A fillet, lightly sautéed and served with fresh spinach (steamed with garlic in a covered fry pan) and boiled new potatoes, accompanied with a fine Chardonnay is a meal to remember. I've never seen fresh Lake Whitefish outside of the Great Lakes area; perhaps they just don't keep. Deli Whitefish is always smoked and available everywhere. "You can't make new old friends" Andy

Posts: 81 10/13/2009 00:51	I don't think fish ever tastes better than it does cooked over a fire in a camp after spending the day roaming the tundra or woods hunting for moose and/or caribou. There were some pretty tasty grayling enjoyed back on the Tyone River. The second night the grayling often shared the menu with fresh caribou backstrap. On a moose hunting trip on King Mountain the hunger was filled at night with fresh fried dolly varden from the stream served with fried potatoes. On fishing trips I'm usually too busy fishing to take time to cook them. But I do remember one memorable grayling dinner prepared on the banks of the Tangle River. As I was cooking the fish on a picnic table I was dodging the backcasts of a dry fly fishing woman in waders! It was very difficult for her to put down the fly rod long enough to enjoy the meal. I grew up eating catfish in the Midwest, but these days the fish I eat at home is usually salmon. Fresh on the grill is best, but salmon fillets vacuum packed and frozen taste almost as good all winter.
