Native Brook, Rainbow, Cutthrout, or wild Brown Trout not over 9 inches in length;
Crappie.
Unless you happen to live in the area where fresh Lake Whitefish is available, your lack of appreciation for this epicurean delight can be forgiven. A fillet, lightly sautéed and served with fresh spinach (steamed with garlic in a covered fry pan) and boiled new potatoes, accompanied with a fine Chardonnay is a meal to remember.
I've never seen fresh Lake Whitefish outside of the Great Lakes area; perhaps they just don't keep. Deli Whitefish is always smoked and available everywhere.
